Makes 12 large cookies Oven 350
INGREDIENTS
1 cup of brown sugar,packed
1 cup of butter at room temperature
3/4 cup white sugar
2 eggs, well beaten
1 Tbsp. vanilla
1 1/2 cups flour
1 tsp. salt
1 tsp. baking soda
2 tsp cinnamon
1 tsp ginger
3 cups old fashioned oatmeal
1 cup sour cherries
3/4 cup bittersweet chocolate chips
1/2 cup coconut (unsweetened )
DIRECTIONS
Whisk eggs in bowl with vanilla,then add cherries and let sit for an hour or so.
Cream butter and sugars till well combined.
In a bowl sift flour, salt, baking soda, cinnamon, and ginger.
Add dry ingredients to creamed and mix.
Add egg mixture and stir in with a wooden spoon.
Lastly add the Oatmeal , coconut, and chocolate chips and stir (at this point I usually use my hands to mix)
Using a cookie scoop form the dough into balls and place on a cookie sheet, leaving a good two inches between.
Press balls down slightly and cook cookies for 12 minutes.
Cool on a rack and enjoy!!!
KITCHEN NOTES
I always just do 6 cookies per sheet and one sheet at a time in the oven
