1 cup flaked sweetened coconut
1 cup all-purpose flour
1/2 tsp. baking powder
1/4 tsp baking soda
1/8 tsp. salt
3/4 cup packed light brown sugar
4 Tbsp. unsalted butter, at room temperature
1 tsp vanilla extract
1/4 tsp coconut extract (optional)
1 large egg
1 cup skor bits
3/4 cup semi-sweet chocolate chips
Preheat oven to 350 degrees F.
Line baking sheet with parchment paper or silpat and arrange coconut in a single layer on sheet
Bake for 5-7 min. until lightly toasted, stirring once.
Set coconut aside to cool.
In a bowl cream butter and sugar till creamy and smooth, about two minutes.
Beat in vanilla, coconut extract, and egg.
Slowly add dry ingredients and mix until combined.
Stir in toasted coconut, skor bits, and chocolate chips.
Using a small ice cream scoop drop on cookie sheets 2 inches apart.
Bake at 350 for 10 minutes or until cookies start to brown around the edges.
Remove from pans and cool on wire racks.
Yields 2 doz cookies
