1/2 CUP SUNDRIED TOMATOES IN OIL,DRAINED,RINSED, AND CHOPPED
1/2 CUP CHOPPED, PITTED, KALAMATA OLIVES
1/2 CUP SLIVERED SPINACH
1/2 CUP CRUMBLED FETA CHEESE
1/4 CUP FRESH MINT CHOPPED
DRESSING
1/2 CUP OF OLIVE OIL
JUICE OF ONE LEMON
3 CLOVES GARLIC, MINCED
SALT AND PEPPER
DIRECTIONS
IN MEDIUM SAUCEPAN BRING 4 CUPS OF STOCK TO A BOIL.
STIR IN THE COUS COUS AND SIMMER UNTIL COUS COUS IS JUST TENDER, WITH A SLIGHT BITE ( ABOUT 12 MIN)
DRAIN INTO A FINE MESH STRAINER AND RINSE WITH COLD WATER AND SET ASIDE TO COOL
IN LARGE BOWL, COMBINE COUS COUS, ONION,OLIVES,TOMATOES AND FETA CHEESE
IN SMALL BOWL WHISK TOGEATHER DRESSING INGREDIENTS
POUR DRESSING OVER COUS COUS,ADD SPINACH AND MINT AND STIR UNTIL WELL COMBINED
