A great recipe from the restaurant Chambar in Vancouver!
Mussels Conglaise
what you will need:
1 lb mussels cleaned
1/2 red onion Julienned
2 cloves garlic chopped
250 ml coconut milk
2 roma tomatoes diced
1 tbsp chipotle puree
1/2 lemon juice
1/2 lime juice
1/2 tbsp ground fennel, coriander, cumin
olive oil
cilantro
black pepper and salt to taste
baguette or any type of bread
Directions:
1. Prepare ingredients and measure out spice mix
2. Heat Oil in a saucepan and saute onion, garlic and ground spice mix for about a minute while stirring
3. Add coconut milk and lemon and Lime juice
4. Add in diced tomatoes and chipotle puree
5. Let simmer for 5 minutes and add salt and pepper to taste
6. Add mussels and cover the lid until all mussels open
7. Garnish the dish with limes, bread and cilantro
You can also double up this recipe if you are cooking for more than one person
