Keahs Triple ginger Cookies

One day I cam home and My daughter had made these amazing ginger cookies. I tweaked the recipe by adding crystallized ginger and fresh ginger for the ultimate ginger combo.

Oven Temp: 35 degrees F

Makes 12 cookies

Ingredients:

2 ¼ cups all purpose flour
2 tsp baking soda
¼ tsp salt
1 tsp cinnamon
2 tsp ground ginger
½ tsp ground cloves
¾ cup unsalted butter at room temp
1 cup dark brown sugar
1 egg
¼ cup molasses
2 tsp grated fresh ginger (optional)
¾ cup candied ginger chopped in small pieces
crystallized sugar pieces to coat

Directions:

preheat oven to 350 F

1. line 2 baking sheets with silpat or parchment paper

2. sift flour, baking soda, salt, cinnamon, ginger, cloves into a bowl

3. toss in candied ginger and fresh ginger to flour mixture

4. in a large bowl beat butter and brown sugar until well mixed for 1 minute

5. add egg and molasses and mix another minute

6. On low speed add flour mixture until just incorporated

7. Using ice cream scoop divide dough into 12 portio

8. Roll each portion into 2 inch balls and roll ball in crystallized sugar to coat

9. Place balls on cookie sheet 2 inches apart 6 balls per sheet

11. Use hands to slightly flatten pieces of dough and bake one sheet at a time for 12 minutes until top is firm but center still soft

12. Cool on sheets for 5 minutes transfer to wire rack
