Serves 4-6
INGREDIENTS:
3 cups of frozen corn
1 tbsp olive oil
4 tbsp lime juice
1/3 cup plain greek yogurt
1/4 cup mayo
1 jalepeno pepper, seeded, chopped
4 oz of cotija cheese (or feta cheese)
3 tbsp red onion, minced
2 cloved garlic, minced
1/4 cup finely chopped red pepper
1/2 cup fresh cilantro chopped
2 tbsp franks red hot sauce
INSTRUCTIONS:
1. Defrost corn, heat in a large skillet on medium high heat with the olive oil 12-15 minutes until slightly browned
2. Take corn off heat and toss with other ingredients, serve immedietly with chips
