INGREDIENTS
1 cup butter
1 1/4 cups sugar
2 eggs
1 tsp vanilla extract
3 tbsp brandy or rum
2 – 2 1/4 cups mashed bananas (about 5)
2 3/4 cups flour
1 1/4 tsp baking soda
8 oz (250 grams) white chocolate, chopped (or combination of milk and white chocolate chips)
1 cup of pecans (or almonds)
1 1/4 cups shredded coconut
METHOD
Preheat oven to 350 degrees
1. Melt butter and cool until just warm.
2. Beat in sugar
3. Add eggs, vanilla and brandy to sugar mixture and beat on high-speed for 5 minutes until pale and thick.
4. Add bananas and beat until well mixed
5. Combine flour and baking soda with banana
mixture and beat slowly on low to mix.
6. Stir in chocolate, nuts and coconut.
7. Pour batter into 2 prepared loaf pans and bake for 1 hour 15 minutes (cover with foil if the bread is browning too much)
