Serves 4-6

INGREDIENTS

3 cups cooked and cooled quinoa

1 avocado, cubed

1/4 cup pistachios, chopped

1 cup fresh or frozen thawed peas

1 tbsp lime juice

big handful of fresh basil, chopped

 

DRESSING

1/2 cup cilantro

1/2 cup basil

1 tbsp pistachio

1 tbsp lime juice

4 tbsp olive oil

1/2 an avocado

2 tbsp goats cheese

1/2 – 1 jalapeno, seeded

salt and pepper

 

METHOD

1. Blend the dressing ingredients in a food processor and set aside.

2. Mix peas, avocado, quinoa, lime juice and dressing in a bowl.

3. Garnish with pistachio and basil.

4. Serve at room temperature.

Use the salad day of as the avocado browns overnight
