Serves 4
INGREDIENTS
2 large garlic cloves, chopped
1 jalapeno pepper, seeded and chopped
3 ripe avocados, halved, peeled and pitted (always have extra)
1/4 fresh lime juice (more to taste)
1 large tomato, seeded and chopped
1 small red onion, minced
2 green onions, chopped fine
2 tbsp fresh cilantro, chopped fine (I always use more)
1 tbsp ground cumin
salt and pepper to taste
METHOD
- Turn on your food processor and drop the garlic and jalapeno into the machine while running, Leave it running until they are as fine as possible.
- Add one of the avocado and the lime juice. Process the mixture until it’s completely smooth then scrape the puree out into a medium bowl.
- Add the other two avocados and mas them coarsely with a fork. Stir in the tomato , onions, cilantro, cumin and salt and pepper. Mix thoroughly.
- Cover the guacamole with plastic wrap and let sit at room temperature for 1 hour to let flavours meld. Serve with your favourite tortilla chips.

I always have more avocados than recipe calls for as you never know what the inside is going to be like.
