Serves 4

 

INGREDIENTS

2 large garlic cloves, chopped

1 jalapeno pepper, seeded and chopped

3 ripe avocados, halved, peeled and pitted (always have extra)

1/4 fresh lime juice (more to taste)

1 large tomato, seeded and chopped

1 small red onion, minced

2 green onions, chopped fine

2 tbsp fresh cilantro, chopped fine (I always use more)

1 tbsp ground cumin

salt and pepper to taste

 

METHOD

  1. Turn on your food processor and drop the garlic and jalapeno into the machine while running, Leave it running until they are as fine as possible.
  2. Add one of the avocado and the lime juice. Process the mixture until it’s completely smooth then scrape the puree out into a medium bowl.
  3. Add the other two avocados and mas them coarsely with a fork. Stir in the tomato , onions, cilantro, cumin and salt and pepper. Mix thoroughly.
  4. Cover the guacamole with plastic wrap and let sit at room temperature for 1 hour to let flavours meld. Serve with your favourite tortilla chips.

I always have more avocados than recipe calls for as you never know what the inside is going to be like.
