SERVES 12
INGREDIENTS:
2 cups of pomegranate juice (I use POM ).
1 1/2 cups of fresh orange juice.
24 oz. of apple cider( My fave. is stongbow).
1 lemon, juiced.
couple dashes of orange bitters. I also use orange syrup that i bought in Napa!!
seeds of 1 pomegranate (fresh is best)
12 rosemary sprigs slightly damp.
1 cup of granulated sugar.
DIRECTIONS
- Combine the pomegranate,orange juice, apple cider, lemon juice, and orange syrup or bitters.
- Stir to combine and put in fridge an hour or two to chill until ready to serve.
- Ladle juice half way into a champagne glass then top with your favorite prosecco.
- Top the glass with a sugared rosemary sprig and a good Tbsp. of pomegranate arils.
SUGARED ROSEMARY.
Gently run rosemary under a little water to dampen it. On a plate pour 1 cup of sugar and roll rosemary in sugar making sure to cover all sides.
Place rosemary on a clean plate and allow to dry for at least an hour. This can be made 1 day in advance and stored at room temp.
