Adapted from The Food Charlatan, but in memory of Stuarts Cafe in Honolulu and the Pioneer Inn in Maui.
Makes 15 4-inch pancakes
INGREDIENTS:
1/2 cup salted roasted macadamia nuts, chopped.
1 1/2 cups flour,spooned and leveled.
2 Tbsp. sugar.
1 1/2 tsp. baking powder.
1/2 tsp. baking soda.
1/2 tsp. salt.
3 Tbsp. butter, melted and cooled a bit.
1 1/2 cups buttermilk.
2 large eggs.
1 tsp. vanilla
1 ripe large banana, mashed.
1 recipe coconut syrup
more bananas, macadamia nuts, and coconut flakes to garnish.
DIRECTIONS:
- Chop the macadamia nuts leaving some fine chunks and some larger ones.
- Add the nuts along with the flour, sugar, baking powder, baking soda, and salt and whisk together.
- Melt the butter in a small bowl and set aside.
- Whisk together the buttermilk, eggs, and vanilla. Whisk in the butter.
- Pour the wet mixture into the dry mixture, and add the mashed banana. Stir until just barely combined.
- Heat a griddle over medium heat and grease well with butter or nonstick spray.
- Use a 1/4 cup batter per pancake and cook until bubbles appear on surface and the undersides are golden brown.
- Flip pancakes with a spatula and cook until light brown and cooked through.
- Transfer to a large plate and loosely cover with foil to keep warm.
- Serve with coconut syrup and extra toppings.
COCONUT SYRUP:
Makes about two cups
INGREDIENTS:
1 14 oz. can of coconut milk ( not light).
1 Tbsp. cornstarch
1/2 cup sugar.
1/2 tsp. salt.
1 Tbsp. light-colored corn syrup.
1 tsp. vanilla
DIRECTIONS:
1. Open can of coconut milk and pour into a small saucepan. With heat off add the cornstarch and whisk until no lumps.
2 .Turn the heat to medium-high, and add the sugar, salt, and corn syrup.
3. Stir very frequently until the liquid starts to thicken. Add the vanilla and remove pan from the heat. The syrup will continue to thicken as it cools.
Serve over pancakes.
COOKS NOTES
If batter seems too thick you can thin it down, little by little ,with extra buttermilk, or milk.
I also make my pancakes fairly big so will not get as many as the 15 stated in recipe.
