  5. Pour the wet mixture into the dry mixture, and add the mashed banana. Stir until just barely combined.
  6. Heat a griddle over medium heat and grease well with butter or nonstick spray.
  7. Use a 1/4 cup batter per pancake and cook until bubbles appear on surface and the undersides are golden brown.
  8. Flip pancakes with a spatula and cook until light brown and cooked through.

  10. Serve with coconut syrup and extra toppings.

Makes about two cups

1 14 oz. can of coconut milk ( not light).

1 Tbsp. cornstarch

1/2 cup sugar.

1/2 tsp. salt.

1 Tbsp. light-colored corn syrup.

1 tsp. vanilla

1. Open can of coconut milk and pour into a small saucepan. With heat off add the cornstarch and whisk until no lumps.

2 .Turn the heat to medium-high,  and add the sugar, salt, and corn syrup.

3. Stir very frequently until the liquid starts to thicken. Add the vanilla and  remove pan from the heat. The syrup will continue to thicken as it cools.

Serve over pancakes.

If batter seems too thick you can thin it down, little by little ,with extra buttermilk, or milk.

I also make my pancakes fairly big so will not get as many as the 15 stated in recipe.
