Purists call for a Mai Tai with no juice, however I like mine a little fruity so I created two different ones !
Make sure and buy good rum, it makes all the difference in the world.
INGREDIENTS:
1 oz. of Appleton 12 rum.
1 oz. of El Dorado Demerara rum 12 year old.
3/4 oz. fresh squeezed lime juice.
1/2 oz. orgeat syrup.
1/2 oz. triple sec.
1/4 oz. simple syrup. ( two parts sugar one part water, bring to a boil, cool and store)
Crushed Mint sprig, for garnish.
DIRECTIONS:
Using a blender crush ice, or put in a ziplock bag and crush with a heavy object.
Add all the liquid ingredients to a cocktail shaker with ice and shake until well chilled.
In a lowball glass, add the crushed ice and strain the cocktail into the glass.
Garnish with mint sprig and lime wedge.
FRUITY VERSION:
1/2 oz. of guava juice.
1/2 oz. pineapple juice.
Add the fruit juices to the liquid ingredients above and shake until chilled.
Pour over crushed ice , and garnish with mint, and a pineapple spear.
